Big leaf maple honey is one of the most distinctly Seattle honeys you can find. Ours is harvested from hives kept at the UW Center for Urban Horticulture (UWCUH), a 74-acre botanical research site in the University District where big leaf maple trees grow in dense groves along the trails and wetland margins. When the maples bloom in early spring, the hives fill fast.

Big leaf maple (Acer macrophyllum) is the dominant maple species of the Pacific Northwest coast. Its flowers are small, clustered, and fragrant — and the bees love them. The nectar produces a honey that is lighter in color than most of what we harvest: pale gold to light amber, with a flavor that leans floral and delicate. The taste opens with hints of rose and fresh blossom, settles into a buttery mid-palate, and finishes with a subtle deeper note of caramel. It is one of the mildest honeys in our lineup, and one of the most versatile.

Like all Seattle Urban Honey products, this big leaf maple honey is raw and unfiltered. We extract cold and jar without heating, preserving the natural enzymes, pollen, and volatile compounds that give each varietal its character. What you taste is exactly what the bees made from the UWCUH maples.

Big leaf maple honey pairs well with mild soft cheeses, stirred into oatmeal, drizzled over yogurt or fresh fruit, or used anywhere you want honey flavor without overpowering the dish. It also makes a clean, floral mead base. The lighter flavor makes it especially good for baking when you want the honey to complement rather than compete.
