Linden honey is one of the most distinctive honeys you can find in the Pacific Northwest, and ours comes from one of Seattle’s most beloved neighborhoods. Our linden honey is harvested from hives kept in four backyards near Green Lake in Seattle, WA, where linden trees line the streets and fill the summer air with their unmistakable floral scent.
Linden trees — also known as basswood or lime trees — produce a nectar that gives this honey its characteristic flavor: bright hints of lime and fresh-cut grass up front, with a lingering finish of pear and toffee. The color is light gold and the texture is smooth. It is one of the most complex single-source honeys we produce.
Like all Seattle Urban Honey products, this linden honey is raw and unfiltered. We do not heat or process the honey after extraction, which preserves the delicate flavor compounds, natural enzymes, and pollen that give each variety its character. What you taste is exactly what the bees made from the linden blossoms around Green Lake.
Linden honey pairs well with soft cheeses, drizzled over yogurt, stirred into tea, or eaten straight from the jar. The 227g (8oz) jar is a great way to try this variety before committing to a larger size.
