Raw blackberry honey from Seattle is harvested at Seattle Urban Honey from two farms near Fall City, WA, where Pacific Northwest blackberry grows in sprawling hedgerows along field margins and creek banks. It is one of the most characteristically Northwestern honeys you can find — bold, fruity, and unmistakably blackberry.
Pacific Northwest blackberry (Rubus armeniacus, the Himalayan blackberry) blooms in late summer, producing white flowers that bees work heavily during July and August. The nectar yields a honey that is medium-amber in color with a flavor profile built around ripe berry: bold and jammy up front, with a bright lemon note underneath and a clean, sweet finish. It is sweeter and more assertive than most floral honeys, and it holds its character even when cooked or baked.
Like all Seattle Urban Honey products, this blackberry honey is raw and unfiltered. We extract cold and jar without heating, which preserves the natural enzymes, pollen, and aromatic compounds that give blackberry honey its intensity. The color and exact flavor profile shift slightly from season to season depending on rainfall and bloom timing — but the bold berry character is consistent.
Blackberry honey pairs well with sharp cheeses, yogurt, and oatmeal. It performs exceptionally in baking — muffins, quick breads, and glazes where you want honey flavor to come through clearly. It also makes a vibrant mead base and an excellent marinade for poultry and pork.
