Knotweed honey is one of the most unusual honeys in the Pacific Northwest, and one of the most distinctive we produce. Ours is harvested from two farms near Fall City, WA, where Japanese knotweed grows in dense stands along creek banks and road margins. Most beekeepers treat knotweed as a nuisance plant. We treat it as a floral source.

Japanese knotweed (Reynoutria japonica) blooms in late summer, producing small cream-colored flowers that bees visit heavily. The nectar yields a dark amber honey with a flavor that sets it apart from everything else in our lineup: malty and earthy up front, with a molasses-like depth and a long, slightly smoky finish. It is the darkest honey we harvest each season, and it polarizes people — you either love it immediately or it takes a few tastes to understand it.

Like all Seattle Urban Honey products, this knotweed honey is raw and unfiltered. We extract it cold and jar it without heating, which preserves the enzymes, pollen, and volatile compounds that give knotweed honey its character. The color ranges from deep amber to near-brown depending on the season.

Knotweed honey pairs well with strong cheeses, dark bread, and meat glazes. It also makes an exceptional mead base. The 227g (8oz) jar is the right size to try it — and most people come back for more.
